Zuccotto al brandy
Ingredienti:
3 fette di pane tramezzino
Per decorare:
crema pasticcera
bacche di goji
Bagna al brandy:
200 ml acqua
100 ml zucchero
1 bicchierino brandy
Crema pasticcera:
250 ml Latte
3 Uova
25 g Farina
75 g Zucchero
Preparazione Bagna:
1. Mettere in un pentolino l’acqua e lo zucchero, scaldarla a fuoco medio fino a che lo zucchero non si sarà completamente sciolto e una volta intiepidito aggiungerci il brandy.
Preparazione crema pasticcera:
2. Ponete sul fuoco una casseruola con il latte e portarlo ad ebollizione.
3. In una terrina a parte amalgamare i tuorli con lo zucchero, aiutandovi con uno sbattitore elettrico per ottenere una crema spumosa e biancastra. Continuando a sbattere unite il latte poco alla volta e successivamente la farina anche questa poco alla volta.
4. Versate il composto nella stessa casseruola, riponete il tutto sul fornello fuoco dolce e portate ad ebollizione, mescolando frequentemente finché il composto si addensi. Spegnete il fuoco e lasciate raffreddare.
5. Per evitare che si formi una pellicola in superficie mentre si raffredda, mettete un disco di carta forno esattamente sulla superficie della crema.
Preparazione zuccotto:
6. Rivestire uno stampo da zuccotto con la carta d’alluminio, tagliare 2 fette di pane tramezzino di modo che si rivesta lo stampo. Spennellare il pane con la bagna, versare una parte della crema pasticcera, coprire con uno strato di pane inumidendola ancora con la bagna, sopra un altro pò di crema ed infine coprite con pezzi di pane tramezzino tagliati dalla terza fetta e spennellare con la bagna.
7. Coprire con la pellicola e tenetelo in frigo per una notte. Capovolgere lo stampo su un vassoio, togliere la pellicola e spalmare lo zuccotto con la crema rimasta. Decorare con le bacche di goji.

Wet with brandy :
200 ml water
100 ml sugar
1 cup brandy
Custard :
250 ml milk
3 Eggs
25 g flour
75 g Sugar
Wet Preparation :
1 . Put in a pot the water and sugar , heat it over medium heat until the sugar has completely dissolved and add us once warmed brandy .
Prepare custard :
2 . Boil a saucepan with the milk and bring to a boil.
3 . In a separate bowl mix the egg yolks with the sugar, with the aid of an electric mixer for frothy and whitish. Continuing to whisk , add the milk a little at a time and even then the flour a little at this time.
4 . Pour the mixture in the same pan , put all the fire on the stove and bring to a gentle boil, stirring frequently until the mixture thickens . Turn off the heat and let cool.
5 . To avoid formation of a film on the surface as it cools , place a disc of greaseproof paper exactly on the surface of the cream.
Preparation skullcap :
6 . Coat a mold skullcap with aluminum foil , cut 2 slices of sandwich bread so that it plays the mold . Brush the bread with the syrup , pour a portion of the pastry cream , cover with a layer of bread wetting it again with the wet over another bit of cream and finally cover with pieces of sandwich bread cut from the third slice and brush with the syrup .
7 . Cover with plastic wrap and keep in the fridge for a night. Invert the mold on a tray , remove the foil and spread the skullcap with the remaining cream . Decorate with goji berries.
